The Brasserie on 3 at Conrad Manila just previewed its Dessert Buffet with a colorful narrative through seven stations featuring an Alice in Wonderland theme.
Dubbed as “Wonderland Reverie”, an indulgent and whimsical dessert buffet at Brasserie on 3, featuring seven curated stations inspired by the timeless Alice in Wonderland by Lewis Carroll, reimagined through delectable sweets and savory bites. Running from April 25 to July 31, 2026, this weekend-only dining experience invites guests to journey through fantasy and flavor, crafted for both children and adults to enjoy.
“At Conrad Manila, we always strive to innovate and provide new experiences for our guests,” said Rupert Hallam, general manager of Conrad Manila. “Thoughtfully curated by our award-winning culinary team, we invite everyone to explore the imaginative installations and delight in expertly crafted flavors at the “Wonderland Reverie” in Brasserie on 3.”
Each station at Wonderland Reverie offers a distinct chapter of the experience, brought to life through decadent flavors and enchanting visuals.
The dessert is available every Saturday from at 2:30 p.m to 5:00 p.m, patrons will enter the realm of the beloved Lewis Carroll classic starting with the Victorian Garden Party down to the Mad Tea Party, to the Rabbit Hole, all through the White Queen Castle and the Escape.

In an interview, Executive Chef Nicolas de Visch shared that the whimsical Alice in Wonderland-themed Dessert Buffet was the result of nearly two months of planning, creativity, and collaboration with the culinary team.
“We started this journey about two months ago when we designed the whole buffet and selection with the team. They did an amazing job of creativity and ingenuity to come up with something like this,” he said.
The buffet takes guests on a culinary journey inspired by the story of Alice in Wonderland—from the elegance of a Victorian tea party to the coronation of the White Queen. Chef Nicolas noted that while some creative liberties were taken, the team also wanted to capture the beloved whimsical style associated with the story, including touches inspired by Tim Burton’s interpretation.
How the Dishes Were Chosen
According to Chef Nicolas, the menu was developed through brainstorming sessions where the team connected food elements to the characters and scenes in the story.
“It was mainly brainstorming. We asked ourselves: what does the Red Queen like? She likes tarts, chocolate, roses—so all those things are there,” he explained.
The Victorian-themed section features pastries and sweets that reflect the era, while other stations draw inspiration from memorable moments in the story, such as Alice’s adventures and magical transformations.
At the same time, he emphasized that the buffet was not only about following the book, but also about showcasing dishes the team genuinely wanted to present to guests.
“It’s not only related to the book—it’s also about the food we wanted to create and share.”

Designed as a Storytelling Experience
The buffet layout itself follows the chapters of the story, allowing guests to explore the spread in sequence if they wish. However, Chef Nicolas encouraged diners to enjoy it in their own way.
“It is placed according to the chapters of the book, but it’s really all about the way you want it.”
Mood boards, sketches, and design concepts were used early in the creative process—an approach Chef Nicolas said may not be the traditional chef’s way, but one that helped bring the concept to life.
“That’s what made us successful—thinking about the design first, then adapting the food to the design.”
A Team Effort
Chef Nicolas also highlighted the many chefs and team members behind the buffet, praising their dedication and artistry. From pastry chefs to live stations such as liquid nitrogen ice cream, he credited the entire team for making the experience unique.
“They’ve all been there from the beginning to support us and create something really special. They did amazing.”
Seven Stations, Seven adventures
Victorian Garden Party. The journey begins on a calm and elegant note at the Victorian Garden Party where guests are treated to delicate creations such as lemon madeleines with a gentle citrus finish, smooth and delicately balanced vanilla mousse domes, and pocket watch cookies.
Mad Tea Party. At the Mad Tea Party, flavors take an unexpected turn. This station plays with contrast and creativity, featuring dulce pot de crème offering a smooth contrast of sweetness and depth, mango honey cake that seamlessly blends bright fruitiness with a soft, lingering richness in a way that feels delightfully unexpected yet thoughtfully composed, and pistachio sphere, a fitting emblem of the Mad Tea Party itself.
Down the Rabbit Hole. Adventurers can savor a surprising balance of flavors Down the Rabbit Hole. The spread includes miso caramel brownies, an out-of-ordinary mix of sweet and savory, rich and smoky maple bacon cupcakes. At the heart of it all stands a white rabbit-inspired chocolate confection, as guests descend together into Wonderland with every bite.
The Red Queen’s Court. Chocolate takes center stage at The Red Queen’s Court. Highlights include handcrafted pralines, a flowing chocolate fountain, and rose-inspired chocolate creations designed to delight both the palate and the senses. The crowning centerpiece is a striking chocolate creation of the Red Queen’s head.
Frabjous (Savory Interlude). Before returning to sweeter notes, guests can pause at Frabjous, a savory and tea-inspired interlude with hot and cold selections. Offerings include warm and velvety smoked tomato cappuccino, golden and hearty Frabjous sausage roll, decadent Earl Grey tea cake, fresh and vibrant caterpillar garden roll, and delicate yet rich Red Queen salmon blinis, providing warmth, balance, and a gentle reset for the palate.
Pool of Tears. For those seeking lighter options, the Pool of Tears presents thoughtfully composed desserts such as sugar-free mango cheesecake and mixed berry chia pudding. At this chapter, guests can also try “Drink Me” flavored shooters and “Eat Me” chiffon cakes.
White Queen’s Coronation and The Escape. The experience concludes with The Escape, where warm and familiar flavors await. Guests can enjoy chocolate babka, cromboloni, and a striking doughnut wall, both visually impressive and deeply satisfying.
