MANILA, Philippines — What began as a themed dining promotion is steadily evolving into a wellness-driven brand platform for The Westin Manila. Through its Green Mondays series, the luxury hotel continues to redefine buffet dining by partnering with like-minded wellness brands and culinary innovators, bringing healthier and more sustainable food experiences closer to urban guests.
For its sixth edition, The Westin Manila has teamed up with The Farm at San Benito, Marriott International’s wellness sanctuary in Lipa, Batangas, to introduce farm-to-table, plant-based dishes inspired by the property’s healing food philosophy. The special collaboration runs from April 13 to May 25, 2026 at Seasonal Tastes, the hotel’s all-day dining restaurant.
Developed by Robinsons Land Corporation and managed by Marriott International, The Westin Manila is recognized for its wellness-forward approach to hospitality, from its signature Heavenly Bed experience to thoughtfully curated menus designed to support guest wellbeing. Since launching Green Mondays in 2024, the hotel has used the platform to spotlight chefs, local brands, and food concepts that share its commitment to mindful dining.
“As a sanctuary for restorative wellness rooted in nature, the restaurants at The Farm at San Benito are curated very much like ours, always with guest wellbeing in mind,” shared Executive Chef Rej Casanova. “So, a partnership to bring thoughtfully curated, plant-based menus with organic, whole food ingredients was a logical collaboration for us.”
Known as one of the country’s pioneering wellness destinations, The Farm at San Benito integrates nutrition into its holistic programs, with menus centered on conscious nourishment and ingredients sourced from its own organic vegetable and herb gardens.
“At The Farm at San Benito, we believe food is also a pathway to healing,” said Executive Chef Marie Pagcaliwagan. “Our menus are crafted to promote wellness from within, taking the farm-to-table philosophy a level further, celebrating the freshness and quality of natural ingredients.”
The Farm at San Benito also houses one of the first vegan restaurants in the country—ALIVE! Restaurant, where their Chef Marie first set out on her path towards healing through food.
Among the featured dishes for this Green Mondays edition from April to May are the healing food signatures at The Farm at San Benito like the Chili Garlic Cauliflower, a savory and mildly spicy take inspired by the classic Buffalo Chicken, and the Beetroot Croquette with Cilantro Chutney, which balances earthy sweetness with bright herbaceous notes. Guests may also enjoy a variety of fresh salads showcasing produce harvested from The Farm’s gardens.
