Discovery Primea highlights Canadian beef at Fire & Flavor

Discovery Primea, in partnership with Canada Beef, has officially launched Fire & Flavor: A Culinary Collaboration — an exclusive culinary showcase celebrating the bold character and unmistakable quality of premium Canadian beef. The event took place at Flame, the hotel’s top-ranked dining destination, and brought together Alberta, Canada agricultural representatives, members of the food and lifestyle media, and key personalities from the culinary and hospitality industries.

The event marked the beginning of a month-long feature at Flame: a special Fire & Flavor menu highlighting Canadian beef, available for a limited time from June 7 to July 7 only.

The mid-day event guests were welcomed by Discovery Primea’s GM David Pardo Ayala, DOSM Angela Soriano, Chef Luis Chikiamco, Marcomms Director Rosie Unson,  attended by Hon. RJ Sigurdson, Minister of Agriculture and Irrigation of Alberta, Canada, Canada Beef’s Albert Eringfeld, and familiar faces from the Embassy of Canada, including Diedrah Kelly, Executive Director for the Indo-Pacific Agriculture & Agri-Food Office, and Louise Pasadilla, Trade Commissioner. The Alberta delegation was represented by Jason Hale, Deputy Minister of Agriculture and Irrigation, John McDonald, Managing Director, Indo-Pacific Region, and Brodie Haugan, fifth-generation rancher and Chair of Alberta Beef Producers.

David Pardo Ayala, General Manager of Discovery Primea, welcomed guests and emphasized the natural fit between Canada Beef and Flame. “We’re proud to be working together on this flavorful collaboration. When Canadian Beef reached out for potential collaboration, I knew right away that we wanted to be part of it, and that it had to happen here at Flame with the expertise of Chef Luis Chikiamco. ”

Special guests included the Honourable RJ Sigurdson, Minister of Agriculture and Irrigation of Alberta, Canada, who spoke about Alberta’s leadership in sustainable beef production and the value of building lasting agricultural partnerships. “Nothing else puts a smile to me more than seeing Canadian beef being served here in the Philippines. I like to thank Canada Beef for organizing this event and promoting it in the Philippines and in other parts of the globe. I also want to thank Discovery Primea for hosting us,” he said.

Representing Canada Beef, Albert Eringfeld, Vice President of Export Market Development, shared his excitement about the collaboration with Flame, describing it as an exceptional restaurant that mirrors a passion for quality and creativity, “It’s a proud moment as we continue to strengthen our presence in the Philippines and share unforgettable dining experiences built around premium Canadian beef.”

The lunch started with  appetizers of Canadian AAA Chuck flap Mexican inspired“Taquito” and Japanese inspired Angus Chuck Eye Roll “Menchu Katsu” nuggets.

Brodie Haugan, a multi-generational cattle producer representing Alberta’s ranching community were also present to showcased the care, passion, and precision that go into every cut of Canadian beef. He also highlighted the values that shape Canadian ranching — animal care, sustainable practices, and a commitment to excellence.

Guests were treated to a preview of the Fire & Flavor menu, developed by Chef Luis Chikiamko and his culinary team at Discovery Primea and the power of Josper oven to bring out the depth and character of Canadian beef using Flame’s signature approach to open-flame cooking.

Vietnamese-inspired Short Rib Plate Pho that felt luxurious with the intense flavor and texture of the beef broth in the soup.

As lunch was served, guests enjoyed dishes that reflected not just premium ingredients, but a shared philosophy: that good food is grounded in care, craft, and culture.
