Inspired by the enduring romance of Maria Clara and Crisóstomo Ibarra from José Rizal’s Noli Me Tangere, the exclusive evening blends heritage, gastronomy, and music through a curated five-course dinner by Executive Chef Lord Bayaban, accompanied by live harana serenades under the moonlight.

The menu reimagines the couple’s love story through Filipino flavors, beginning with Ensaladang Lato, a sea grape salad with calamansi and vinegar, followed by Laing Rolls wrapped in crisp lumpia pastry with coconut cream. The soup course features Bulalo, a slow-cooked veal shank dish symbolizing family ties and tradition. For the main course, Surf and Turf Kare-Kare Royale pairs oxtail, beef, and sustainable prawns in a rich peanut sauce, before concluding with Sylvanas de Maria Clara, a delicate cashew meringue dessert.
