Conrad Manila proudly welcomes back renowned chef Jereme Leung, who returns to the hotel’s award-winning restaurant, China Blue by Jereme Leung, to present an exclusive multi-course set menu. From April 22 to 30, guests are invited to experience Chef Leung’s innovative culinary approach through meticulously crafted dishes made with ingredients sourced locally and within East Asia.

Chef Jereme Leung, a celebrated pioneer in modern Chinese cuisine, is widely recognized for his signature “East-meets-West’ philosophy. Dishes like slow-cooked duck leg with pickled olive soy demonstrate his ability to refine regional Chinese traditions, while seared US scallop with spinach egg custard reveals his flair for contemporary plating.
His returns this April, onboard the official airline sponsor Philippine Airlines, promises to be a one-of-a-kind culinary treat for the restaurant’s discerning patrons.

The exclusive dining experience, priced at PHP 6,588 nett per person, includes:
- Appetizers: Suckling pig stuffed with black glutinous rice and salted egg, deep-fried sea cucumber and shrimp with taro in spicy hawthorn sauce, marinated dehydrated vegetables and century egg with porcini mushroom sauce in a crispy tube
- Soup: Slow-boiled yellow croaker stock with water bamboo shoot and black fungus
- Main Course: Slow-cooked duck leg with pickled olive dark sweet soy glaze, steamed spinach egg custard with seared US scallop in dry scallop pickled ginger sauce, poached flat noodle with fresh crab meat, fragrant shallots and spring onion sauce
- Dessert: Chocolate tree with pandan sponge and raspberry ice cream
