Grand Hyatt Manila’s Chinese restaurant introduces new creations while retaining its established Cantonese favorites.

No. 8 China House at Grand Hyatt Manila is adding new dishes to its Cantonese menu, bringing together familiar Chinese cooking techniques, premium ingredients and new flavor combinations.

The new selections begin with Preserved Egg with Fried Green Peppers, pairing the rich, creamy character of preserved egg with the gentle heat and smoky notes of green peppers. Cold Yam with Blueberry Sauce offers a more unexpected combination, bringing crisp Chinese yam together with a refreshing fruit-forward note. Together, the two starters set the tone for the refreshed menu—traditional ingredients approached that play with contrast.

The new seafood selections take a more delicate direction. Steamed Green Grouper with Cordyceps Flower and Onion, which keeps the naturally delicate flavor of the fish at the forefront, allowing the freshness to come through. For something richer, the Steamed Green Crab with Pork and Onion, combines the natural sweetness of crab with a savory pork filling.

For heartier flavors, Hot and Sour Boiled Angus Beef with Mushroom serves the tender Angus beef in a richly seasoned broth, while Pan-Fried Chicken with Shallot and Bean Sauce combines tender chicken with aromatic shallots and fermented bean sauce.

Among the featured dishes is Braised Dongpo Pork, prepared with thinly sliced braised pork belly arranged into a pyramid presentation. A rich sauce is poured over the pork tableside, adding a visual element to the classic preparation.

The new dishes join No. 8 China House’s established Cantonese selections, including Cantonese Barbecued Combination of roasted duck, barbecued pork, jellyfish and air-dried beef; Double-Boiled Papaya Soup with Fish Maw, Pork and Chicken; Traditional Peking Duck; Har Gow Shrimp Dumplings; Xiao Long Bao Pork Dumplings; Siu Mai with Pork, Shrimp and Crab Roe; Crispy Barbecue Pork Bun; and Deep-Fried Pumpkin with Salted Egg Yolk.
