Created by Executive Chinese Chef Kevin Xu and his team, the collection spans traditional baked favorites, contemporary creations, delicate snow-skin mooncakes and Shanghainese specialties, bringing together different expressions of one of Chinese culture’s most enduring festive traditions.
Classic baked mooncakes anchor the collection with familiar flavors including Five Nuts, Red Bean, and White Lotus with Salted Egg. Alongside them, Chef Xu introduces contemporary combinations such as Chinese Bacon, Milk Tea, Salted Egg Pork Floss, Black Sesame, Peach Oolong and Chestnut, balancing traditional pastry-making techniques with flavors designed for modern palates.

The collection extends to snow-skin mooncakes, offering a softer, lighter interpretation of the festive classic in flavors including Rose, Matcha with Salted Egg, Mocha Coffee, Cheese Kiwi Taro, Milk Tea and Osmanthus. Hua Yuan’s Shanghainese roots are also reflected in Shanghainese Mooncakes with Pork Meatballs and Black Sesame, adding a savory expression to the collection and showcasing another facet of Chinese pastry tradition.
Each mooncake is handcrafted by Chef Xu and the Hua Yuan culinary team, from preparing the fillings to molding and baking the pastry. The approach reflects Hua Yuan Brasserie Chinoise’s wider culinary philosophy, which celebrates the rich heritage of Shanghainese cuisine through a contemporary lens.
Created with gifting in mind, “A Bright Full Moon” is presented in a keepsake woven bag inspired by traditional craftsmanship.
