Marco Polo Ortigas Manila marks the start of the new year with the appointment of Executive Chef Alex Ensor, a New Zealand–born culinary leader whose career spans nearly three decades across Australasia, Southeast Asia, and the Middle East. Recognized for his disciplined craftsmanship, contemporary sensibility, and ability to lead high-performance kitchen teams, Chef Ensor brings a globally informed yet deeply ingredient-driven approach to the hotel’s culinary direction.

Chef Ensor’s professional journey has been shaped by senior leadership roles in competitive luxury dining environments, where he has overseen award-recognized restaurants and large, multicultural culinary teams. His cooking philosophy balances refined technique with approachability, drawing on global influences while maintaining a strong respect for seasonality, local produce, and clarity of flavor.

“I’m excited to be joining Marco Polo Ortigas Manila at a time of renewed energy and opportunity,” says Executive Chef Alex Ensor. “I have a deep respect for the Filipino palate and its warmth and generosity. My focus is on creating food that feels familiar yet thoughtful—dishes that are comforting, well-crafted, and grounded in quality ingredients.”

Now leading the hotel’s overall culinary vision, Chef Ensor introduces his first major dining initiative at Cucina with the launch of The Crafted Table, a new semi-buffet concept debuting on 19 January 2026. Available for lunch and dinner from Monday to Wednesday, the concept reflects Chef Ensor’s belief in elevating comfort through craftsmanship and balance.  Guests begin with a curated selection of cold dishes, soups, and freshly baked artisan breads, followed by a thoughtfully prepared main course served à la minute. The experience may be further enhanced with premium dessert selections and optional beef upgrades, offering flexibility while maintaining a clear culinary focus.

The introduction of The Crafted Table signals a confident evolution for Cucina—one that responds to modern dining preferences without compromising culinary integrity. Under Chef Ensor’s leadership, Marco Polo Ortigas Manila continues to strengthen its position as a dining destination defined by skill, intention, and memorable guest experiences.
