CCA Manila hosts first Tikim Weekend Food Market on Oct. 3–4

The country’s leading culinary institution, the Center for Culinary Arts (CCA Manila), is set to launch the first-ever Tikim Weekend Food Market on October 3–4, 2025 at the Brittany Hotel, Bonifacio Global City.

More than a food fair, Tikim is envisioned as a celebration of Filipino culinary talent, a marketplace of ideas, and a hub for aspiring food entrepreneurs.

“Tikim is a learning space as much as it is a celebration,” said Dr. Veritas F. Luna, Chancellor of CCA Manila. “By bringing together entrepreneurs, chefs, alumni, and foodies, we hope to highlight the hard work and creativity that go into building food businesses. This event reflects CCA’s vision of nurturing Filipino talent and shaping leaders in the culinary industry.”

Day 1: Business Workshops

The two-day festival opens on October 3 with Tikim Business Workshops at the hotel’s Acacia Room. Sessions will cover scaling a single-store concept, building smarter kitchens, and mastering content that sells. CCA Manila alumni will also share success stories of turning culinary passion into thriving businesses.

Speakers include Cyrill Chan of Panero – From Oven to Enterprise; Chef Menoy GimenezFrom Kitchen to Cash Flow; Princess San Diego of What’s Your Flan? – Beyond One Store; Aaron Limpe-Aw of Destileria Limtuaco – Sip to Success; David Sison of Mama Lou’s – Smarter Kitchens, Smoother Ops; and, Chit Juan of ECHOStore – Green and Local Advantage. 

Day 2: Live Kitchen

On October 4, the spotlight shifts to the Tikim Live Kitchen at the hotel’s Tavern, featuring culinary showcases where food becomes both craft and storytelling. Highlights include: Heritage dishes by Chef Reggie Aspiras and Chef Martin del Prado;  Global-meets-local flavors with Chef Sharwin Tee; Dessert innovations by Chef Anne Atanacio; and, an interactive Kitchen Discovery Class by CCA Manila faculty.

Running throughout the weekend is the Tikim Food Market, featuring over 30 food merchants ranging from artisanal bakeries and dessert innovators to modern Filipino cafés and grill concepts.

Confirmed participants include Say Halo by Danica Lucero, Sondo by Chef Sonny Mariano, Satisfy by CCA, Chef Al Torres, Mika Bakehouse, Sweet Platform, Moony Desserts, My Cake by ORA, Middle Grounds Café, JRic’s Grill & Restaurant, and Favored MNL.

The market also serves as a showcase of CCA Manila’s strong alumni network—graduates who now lead successful food ventures locally and abroad.

The Tikim Weekend Food Market will run from 11 AM to 8 PM daily. Admission is free, and booths are open for food entrepreneurs who wish to join.

Founded in Bonifacio Global City and accredited by the American Culinary Federation Education Foundation (ACFEF), CCA Manila continues to be the country’s pioneer culinary institution, combining rigorous culinary training with business education. Its graduates now lead kitchens and food ventures in the Philippines and overseas.
