Fresh, premium-quality shrimp is now easily accessible to cater to the needs of hotels and restaurants. Thanks to the advanced and diverse food options offered by DATAJ Aquafarm, a renowned producer and processor of highly sought-after white-leg shrimp (suahe) in the Philippines.
DATAJ Aquafarm has not just put the Philippines on equal footing with other countries in terms of shrimp production but has also introduced a more convenient and luxurious way for Filipinos to enjoy eating shrimp.
DATAJ Live Catch Shrimp are freshly harvested from their aquaculture farm in Sta. Teresita, Cagayan, which covers a total of 186 hectares, including its cutting-edge processing plants.
The company breeds Litopenaeus vannamei (white legs or suahe) as it is considered the gold standard of shrimp in the culinary world due to its size, flavor, and nutritional content.
Chief Operating Officer Engr. Cynthia P. Tamayo shared, “My husband, Engr. (Danilo) Tamayo, comes from a family of farmers and has always had a passion for fishing. We are from Cagayan province, and it has been our lifelong goal to produce and share abundance in the environment. Our corporation started in construction, but we successfully expanded to a 150-hectare aqua park in 2009. We are proud to serve the global community and contribute to the economy by providing hundreds of jobs to our fellow countrymen.”
Established in 2009, DATAJ Aquaculture Inc. has developed a semi-integrated system with nursery intensive growth-out farms, processing plant and export facilities. Their daily harvest averages 15 tons of fresh shrimps, and their processing plant can handle up to 20 tons of raw and frozen shrimps per day, with a cold storage facility of 273 tons. They offer six frozen product types available: Head On Shell On, Headless Shell On, Peeled and Deveined Tail On, Peeled and Deveined, Peeled and Undeveined, and Nobashi or tempura-ready shrimp. They also have various cooked varieties—Headless Shell On,Head On Shell On—for salad or quick and immediate consumption.
“We assure freshness. We are the only integrated farm that processes live catch that allows up to two years shelf life,” said acting General Manager Atty. Joseph Garcia, emphasizing that their technology comes from the United States, Japan, and Canada and using the latest blast-freezing process from Europe.
The harvested shrimp are almost farm-to-table, spending a maximum of 10 minutes out of their habitat before being blast frozen to seal its fresh quality. Garcia explained, “We transfer them to aerated containers, then onto conveyors to be frozen, which is different from other suppliers who chill their shrimp before freezing, resulting in them not being alive when frozen.”
Even Chef Rob Pengson, who was invited to showcase his creative cuisines with shrimps, shared his insight, ”It’s like capturing the shrimp at its peak quality – very similar to the way tuna is caught for sushi chefs.”
Certifications such as Good Manufacturing Practices (GMP), Food and Drug Administration (FDA), Department of Agriculture (DA), Hazard Analysis and Critical Control Points (HACCP), Halal, Best Aquaculture Practices (BAP) from GSA, along with approval from the Bureau of Customs and EU Certification, guarantee that Philippine shrimp will stand out in both domestic and global markets.
