Discovery Primea’s Executive Chef Luis Chikiamco presents his own variations of this classic festive rice dish. The spread features Paella Valenciana, a flavorful combination of chicken, chorizo, prawns, mussels, bell peppers, and saffron broth; the enticing Paella Negra made with squid, prawns, squid ink, and parsley; and Paella Champiñones cooked with an abundance of button shiitake, and Portobello mushrooms. Each paella is prepared carefully cooked over an open flame, and served on the piping hot paellera.
