CCA, Manila to hold ‘The Future of Food’ on Nov. 23

Underscoring the increasing relevance of understanding and predicting key trends impacting the food and hospitality industries, the pioneer culinary arts institution in the country, the Center for Culinary Arts (CCA, Manila), invites current and aspiring leaders to take part in an international conference entitled “The Future of Food: Business Directions for Hospitality & Culinary Leaders” on Nov. 23, 2016, 8 a.m. to 5 p.m., at the UP Auditorium in Bonifacio Global City, Taguig City.

 

The one-day conference offers timely analyses and dynamic panel discussions to be led by a powerhouse cast of food authorities and culinary experts who will talk about the most pressing issues facing us today and in the near future.

 

Leading the speakers’ line up is Senate Committee Chairman on Agriculture Senator Francis Pangilinan who will deliver the Keynote Address, “The State of Food Security in the Philippines.” This will be followed by the “Food and Dining Trends in Asia Pacific Region” talk by Disciples Escoffier International Chairman Master Chef Robert Fontana and “Dining Trends of Today’s Generation in the Philippines” session by award-winning communications strategist at McCann Erickson Worldgroup Philippines Eileen Borromeo.

 

Also top-billing this year’s conference is Michelin-starred French Master Chef Christian Tetedoie with his talk entitled “Synergizing Traditional and Modern Techniques”. Tetedoie, the current President of Maîtres Cuisiniers de France and recipient of the prestigious Meilleur Ouvrier de France recognition, is also a regular visiting guest Master Chef at the Institut Culinaire Disciples Escoffier of Hong Kong.

 

Another event highlight is the expert talk by globally renowned 3-Michelin starred Chef Alvin Leung who will share his insights on “Modernizing Cooking Techniques”. Leung, the self-proclaimed “Demon Chef”, is one of the rare self-taught chefs to have a 3 Michelin-star establishment, Bo Innovation.

 

A collaborative panel discussion on “The Social Responsibility of Sustainability: Issues and Challenges from Movement Advocates” will be headed by Christian Schmidradner of Meliomar Inc.;  Chit Juan of Slow Food Movement and Philippine Coffee Board member; and, Amy Besa of Purple Yam and founder of Ang Sailing Atin Culinary Heritage Movement.

 

Global and domestic restaurant owners and kitchen pop-ups purveyors will also share their insights on entrepreneurship and the Filipino cuisine in their respective talks: Gallery Vask’s Chef Chele Gonzalez (“Applying Sustainability Principles in the Food Business”); Nicole Ponseca, owner and CEO of Maharlika Filipino Moderno and Jeepney Filipino Gastropub (“Filipino Cuisine: How Did We Get There and How Do We Stay Relevant”); and Filipino Kitchen’s co-founder Maria Natalia Roxas (“Pushing Global Recognition for Filipino Food: Challenges and Opportunities”).

 

Capping off the international conference is the session entitled “The Business of Sustainability and Food Entrepreneurship: Best Practices from Restaurateurs, Educators, and Trade Suppliers.” Featured panelists are Dr. Christina Aquino (President, Asia Pacific Council of Hotel, Restaurant and Institutional Education), Weizel Gulfan (owner, Coco Green), Gejo Jimenez (farmer/entrepreneur and owner of Malipayon Farms), and Chefs Steve and Cristina Carl (owners of Grind Burger).

 

Apart from open discussions, participants also get to interact with the guest speakers, as well as connect with key personalities and top enterprises that can help them leverage new opportunities for their businesses. Truly, an event that should not be missed!
