Western Visayas, renowned for its opulent cultural heritage and picturesque landscapes, is set to captivate the palates of gastronomes as The Manila Hotel pays homage to the region’s diverse culinary treasures at Café Ilang-Ilang this August.

In its latest culinary presentation, Café Ilang-Ilang has teamed up with Chef Rafael “Tibong” Jardeleza, Jr., the culinary virtuoso and ardent Western Visayas heritage cuisine advocate.

Through this exhilarating partnership, Café Ilang-Ilang brings forth the very essence of Western Visayas to its dining tables. Acknowledged as the Culinary Haven of the Philippines, Western Visayas boasts a dynamic food culture that mirrors its historical background, geographical attributes, and cultural influences. This collaboration is a showcase of an extensive range of dishes that spotlight the region’s indigenous recipes, unique ingredients, and time-honored culinary techniques.

A standard-bearer of heritage cuisine

Hailing from Western Visayas himself, Chef Tibong has woven his culinary expedition deeply into his passion for preserving and championing the region’s gastronomic heritage. Infused with inspiration from his upbringing and family customs, his creations interweave a contemporary flair into traditional dishes, offering an elevated experience that resonates harmoniously with both locals and global food enthusiasts.

Embark on a gastronomic adventure

At Café Ilang-Ilang, patrons are invited to embark on a gastronomic adventure that reveres the flavors, components, and culinary of techniques of Western Visayas. Throughout the entire month of August, visitors of Café Ilang-Ilang can indulge in handpicked dishes showcased during lunch and dinner buffets. The weekly rotation of featured dishes includes delectable offerings such as Guimaras Mango with Ginamos sa Tulapo, KBL (Kadios, Baboy, Langka), Laswa, Pancit Molo, Pancit Efuven, Beef Morcon, Chicken Binakol, Lengua Estofado, Bitchuelas, Sopa de Ajo, Fabada, Kinilaw na Tanguigue, Paella Negra with Chiperones, Canonigo, and Lapaz Batchoy Ice Cream.
