Discover the rich and unique culinary artistry of the Philippine Northern and Southern regions this June at Conrad Manila’s award-winning all day dining restaurant, Brasserie on 3.

“We are delighted to celebrate the diverse gourmet tradition and heritage of the Philippines, as we take our patrons on a journey of flavor with signature dishes from Luzon, Visayas, and Mindanao, “ shares Linda Pecoraro, hotel general manager.

Sustainably-sourced, organic and local ingredients take center stage at Brasserie on 3’s interactive theater kitchens as curated by Executive Chef Warren Brown and Executive Sous Chef Patricia Mesina. The hotel’s epicurean ambassadors present diners with regional favorites: Pyanggang Manok, a chicken stew cooked in flavorful sauce from combined flavors of charred coconut meat with flavorful spices, turmeric, ginger and lemongrass;  Balbacua, cook beef stew made from collagen-rich oxtail cooked slowly in an open fire; Seafood Kare-kare, simmered in rich and flavorful sauce made from roasted peanuts; Seafood Paella filled with prawns, squids and crabs made more delectable with the addition of crab fats and chorizo. Of course, the centerpiece is the Cochinillo to go with paella.
