Chef Francis recently joined Belmont Hotel Manila to assume the key role of Executive Chef. He brings with him 25 years of extensive experience in the culinary industry. His kitchen journey began in Singapore where he started as Trainee Chef. And from there, he steadily rose through the ranks and took on different roles that led him to work in hotels and resorts here and abroad. His impressive career includes working with top international brands such as Raffles, Mandarin Oriental, and Hyatt, just to name a few.
One of his notable local assignments was his work with a renowned holistic medical wellness resort, wherein he revamped and launched a healthy menu that could cater to the needs of the guests and the property’s brand promise.
Throughout his career he was exposed to different cuisines and was mentored by chefs hailing from other countries. But, the best cooking for him is still his mom’s. A true blue Ilocana, his Mom ignited his love for food. When asked about his cuisine of expertise, he names Western cuisine as part of his blood, but he expressed his love for Asian food as well. He cites not only Filipino, but also Singaporean, Malaysian, Indian and Thai food as his favorites.
