As the country hosts the first Madrid Fusion Manila in April, Diamond Hotel Philippines will celebrate the country’s culinary heritage by holding La Fiesta Espanola, a Spanish food festival, at Corniche restaurant on April 21-26.
The food promotion is one of the 47 culinary events scheduled in different cities in the country — parallel activities of Madrid Fusion Manila.
The hotel invited a young Catalan chef from Lleida, Spain, Edgard Sanuy Barahona, to prepare authentic Spanish cuisine. Raised in a family of successful culinary professionals, Barahona has worked in Michelin star restaurants and was previously mentored directly by Sergi Arola, one of the leading chefs of Spain.
Barahon will feature dishes like Spanish cold soup Gazpacho, Watermelon Sangria Infused, Arbequina Olives Marinated in Thyme and Orange. A few of the salad options include Seafood Salad with Avocado and Lime Mayonnaise and Russian Potato Salad and Salmon Roe. Servings of T-bone with Chimichurri Sauce and Mustards as well as Strip Loin, Mojo Rojo and Mojo Verde are aplenty.
The promotion will be available for lunch and dinner buffets. An exclusive degustation 8-course dinner paired with fine Spanish wines will also be available on April 22 at the Constellation on the 27th floor. Meanwhile, the Sky Lounge and Lobby Lounge will be serving its own Spanish specialties such as the classic prime tapas for the entire period.
